2. Prepare proper amount of edible salt. The ratio of edible salt to fish should be 1: 15. Then spread the edible salt evenly on the fat fish, marinate it in a cool place, and turn the fish over every day.
After a week, the fish can be pickled. At this time, you can take it out and wear it with a rope, hang it in a cool and ventilated place, and let it dry slowly in the shade. It takes about 10 to 15 days to completely dry the fish. At this time, the salted fish is cured.
(2) Salted fish curing method 2
1, the common black herring in the pot can also be used to pickle salted fish. It is best to choose the middle part of the black herring when pickling, so that the salted fish will be plump and attractive. After canceling the interruption of the big herring, separate it from the middle, and then prepare the right amount of salt and cooking wine, ginger and aniseed.
2. Evenly spread the prepared edible salt on the surface of the big herring, then put it in a clean container, add cooking wine and Jiang Mo, and marinate the star anise after mixing. When curing, you can press heavy objects on the fish. After 4 to 5 days of pickling, the fish will taste delicious and can only be taken out to dry.
3. Put the pickled herring on the rope and dry it in a sunny place. Generally speaking, it can be dried in five to seven days, but the longer salted fish is dried, the better it will taste, so when you make it at home, you'd better let it dry for a long time.
2. How to eat salted fish
How to eat dried salted fish;
The first method: soak the dried fish in cold water for 3 hours, wash it and put it in a bowl. Add oil, salt, pepper (dry or fresh), shredded ginger, a little vinegar, onion, a little red wine and a little pepper. Put some water properly and steam slowly for 20 minutes. It tastes very good.
The second type: after the same soaking, wash it, put oil in a wok, turn the fish over a few times, pour in soy sauce, stir fry again, add soybeans and appropriate amount of water, cook for a while, add milk, salt, ginger, onion and other seasonings, cook until cooked, and then add monosodium glutamate. This way, even if I am very picky about food, I still feel delicious.
The third kind: as I said upstairs, of course, it can be stewed with other dried plums.

1] Fried salted fish with silver buds: the salted fish is soaked in water, softened and drained.
