How to make dried tofu?
Material: dried bean curd
Accessories: coriander, garlic and pepper.
Seasoning: salt, light soy sauce, cooked white sesame, sesame paste, sugar and sesame oil.
Exercise:
1. First cut the dried bean curd into 8 cm wide strips, and then cut into filaments.
2. Wash coriander and cut into sections. Crush garlic and cut it into fine powder.
3. Boil a pot of boiling water in the pot, add dried bean curd 1 min, take it out and cool it, and turn on cold water.
4. Add an appropriate amount of vegetable oil to another pot, add an appropriate amount of pepper, stir-fry until it changes color, and remove the oil.
5. Add chopped garlic and cooked white sesame seeds in a small bowl, and pour the burnt pepper oil on the garlic to stimulate the fragrance.
6. Then add 2 grams of salt, 5 grams of soy sauce, 5 grams of sesame paste, 2 grams of sugar and 3 grams of sesame oil to the bowl and mix well.
7. Finally, put the dried bean curd on the plate, pour the prepared sauce on the surface, and add a few coriander on the surface.
Fried dried bean curd with vegetables
Ingredients: Dried bean curd, carrot and sweet pepper.
Accessories: onion, ginger, garlic and red pepper.
Seasoning: salt, sugar, pepper, oyster sauce, sesame oil and water starch.
Exercise:
1. First cut the dried bean curd into strips with a width of 5cm, then cut into filaments, cut carrots into filaments, and cut sweet peppers into filaments after removing pedicels and seeds.
2. Cut the green onion into sections, slice the ginger and garlic into a bowl, and add a little red pepper.
3. Add a lot of water to the pot to boil, add 2 grams of salt, add a few drops of vegetable oil, blanch the dried tofu and carrots for 30 seconds, and take them out after controlling the water.
4. Add a proper amount of vegetable oil to another pot. When the oil is hot, add onion, ginger, garlic and red pepper and stir-fry until fragrant.
5. Add the bell pepper and stir-fry for about 30 seconds.
6. Next, add dried bean curd and carrot, stir well, add 1g salt, 1g sugar, 3g oyster sauce and 1g pepper, and stir-fry to melt the seasoning.
7. Pour in the appropriate amount of water starch, and finally turn off the fire and pour in the appropriate amount of sesame oil to serve.
