Why is Chaoshan area called "the hometown of preserved fruit"?

Chaoshan is located in the southeast of Guangdong, where there are many kinds of fruits in the four seasons, and it is known as the "hometown of candied fruit". Among them, the most famous preserved fruits are the old medicine orange, old fragrant yellow and yellow-skinned douchi, which are called "Chaozhou Three Treasures".

Chaoshan area is rich in food culture, mostly for light health preservation. "Three Treasures of Chaozhou" is the concentration of healthy diet in chaozhou people. They are all medicinal foods with high medicinal value, among which the old medicine orange is the best among candied fruits.

The old medicine orange is made of local excellent kumquat as raw material and licorice, salt and honey as auxiliary materials. Kumquat itself is sour and sweet, producing saliva to quench thirst. It is made by the traditional ancient decocting process, steamed and dried for nine times repeatedly, and finally the aged orange is canned and preserved.
