What's the difference between leek and green leek?

When leek grows in sunny conditions, its leaves are dark green and its plants are strong. Because leek is fresh, tender and delicious, and its flavor is beautiful, in the history of our country, leek was once enjoyed only by royalty and powerful people. No wonder Su Shi, a famous poet in the Northern Song Dynasty, said in a poem: "The east wind is bleak, and Artemisia annua tries spring vegetables." Up to now, although the production scale of leek has expanded a lot, the price of leek has been high in various markets, which is generally 3 ~ 5 times higher than that of green leek.

The production of green leek depends on sunlight for photosynthesis, which can produce a lot of nutrients to meet its own growth and development. However, leek yellow is produced in a dark environment without photosynthesis, so it can only rely on the nutrients stored in the roots and the water and fertilizer absorbed by the roots in the early stage to maintain its own growth. When the stored nutrients can no longer be fully supplied, it must return to the sun to resume normal growth and make nutrients for storage. Therefore, the production of leek should be a stage of annual growth of leek. In the early stage, to ensure the healthy growth of leek, the root plant should have thick, full and hard leek gourd to store enough nutrition, so as to obtain high yield of leek.
