There are several altar-sealing series in Xijiu.

Xi wine has four altar-sealing series. They are: cellar series, times series, Luzhou-flavor series and Maotai-flavor series. Xijiu is the wine produced in Xijiu Town, Xishui County, Guizhou Province. Xijiu takes local high-quality waxy sorghum as raw material and wheat as high-temperature Daqu, which is made by saccharification, secondary feeding, eight fermentations, nine distillations, sealed storage and careful blending. It tastes of maotai liquor.
