Jiaozi has always been a special traditional pasta in China. When we are in the long summer, we will eat jiaozi. Long summer is the seventh solar term among the twenty-four solar terms and the first solar term in summer. It is held every year from May 5th to 7th in the Gregorian calendar.

At this time, the bucket handle of the Big Dipper points to the southeast, and the longitude of the sun reaches 45 degrees. According to the almanac, the bucket refers to the southeast and the dimension is the long summer. Everything grew up here, hence the name Long Summer.

The twenty-four solar terms were originally formulated according to the changes of stars. The Big Dipper rotates circularly, and bucket handle rotates clockwise once, which is called one year old. The establishment of the current twenty-four solar terms is based on the annual apparent movement of the sun, that is, the degree of the solar ecliptic. Although they are established in different ways, the cause of the struggle is that the earth revolves around the sun, so the time of their intersection is basically the same.

Twenty-four solar terms are a special festival in the trunk and branch calendar, which marks the change of natural rhythm and the establishment of December. Dou refers to the long summer in the southeast, and everything has grown up since then, hence the name long summer.
