The solar term for eating spring cakes is in beginning of spring.

Beginning of spring is the first of the 24 solar terms in the lunar calendar. "Stand" means "start", and beginning of spring means that winter goes and spring comes. On this day in beginning of spring, there is a folk custom of eating spring cakes, which means "biting the spring" and "entering the spring".

Spring cakes are as thin as cicadas. What is recorded here is the spring rolls (also called spring rolls) made by smearing fine flour on a 1 flat pan to make extremely thin and transparent cakes, which are used to wrap shepherd's purse stuffing and then fried. Spring cakes and spring rolls were symbols of spring in the eyes of the ancients.

Spring cakes are round cakes made of white flour and baked. According to Tiaodingji in Qing Dynasty, the method of making spring cakes is to "roll dough with ham, chicken and other things, or stir-fry cabbage in four seasons for customers to eat. Crush the marinated pork tenderloin, garlic, black dates, walnuts and foreign sugar (white sugar) and roll them into pieces. " This is the way to eat in the Qing Dynasty. But now it has evolved into spring cake with sweet noodle sauce and rolled onions.
