Braised pork, also known as Dongpo meat, is characterized by rosy color, fat but not greasy, instant in the mouth, rich in nutrition and delicious with abalone, and is known as "soft gold" on the seabed. Required ingredients: pork belly 350g abalone 8- 10 crystal sugar 10g onion 1 ginger 4-5 slices of star anise 1 2 tablespoons soy sauce 1 spoon cooking wine 1 spoon sesame salt, a little cooking oil and a little hot water 1.
Cooking steps:
1. Dig the abalone out of the shell with a spoon, remove the internal organs, brush the black part of the edge with a small brush, and cut the surface with a cross knife.
2. Pork belly is cut into slightly larger squares, and onions, ginger, star anise and rock sugar are prepared.
3. Put the pork belly in a pot with cold water, boil it over high fire, skim off the floating foam on the surface, remove it and dry it with kitchen paper or drain the excess water.
There is no need to put oil in the pot. Deep-fry the pork belly in low fire until it is oily and the skin is brown.
5. Just put the fat of the fried meat in the pot into the rock sugar and stir-fry until the rock sugar melts amber. This step is called "stir-frying sugar".
6. Stir-fry the pork belly and color it, then add the onion, ginger and star anise and stir-fry for fragrance.
7. Add soy sauce, soy sauce and cooking wine and stir-fry until the pork belly is colored.
8. Add hot water to boil and simmer for 40-50 minutes.
9. When the braised pork is almost cooked, add abalone and continue stewing for about ten minutes.
10. When there is a small amount of soup left in the pot, stir fry over high fire to collect the juice and sprinkle with sesame seeds and chopped green onion.

Tips:
Choose a layer of fat and a layer of thin braised pork, stir-fry the rock sugar back and forth with low fire, and be careful not to stir-fry, otherwise the braised pork will be dark and bitter. Seasoning is added according to your own taste. Soy sauce and soy sauce are salty, so add salt appropriately.
