Shanxi lingshi specialty?
Shanxi over-mature vinegar is Daqu made of sorghum, bran, chaff and water as main raw materials, and barley and peas as saccharifying and fermenting agents. It is made by alcohol fermentation, solid acetic acid fermentation and fermented grains aging.
