How to make authentic Dongpo elbow?

Composition:

Pork elbow 1, ginger 1, half onion, cooking wine 1, pepper 5g, star anise 1, cinnamon 1, pepper half a spoon, soy sauce half a spoon, bean paste 2 spoons, oyster sauce 1 spoon, etc.

Exercise:

1. Get all the materials ready. First, soak the pig's elbow in cold water for a while.

2. Prepare a pot of clear water, add salt and cooking wine to boil, simply blanch the hoof in water, and then rinse it with cold water.

3. Prepare another pot of clean water, put the pork elbow into cold water, and add ginger, star anise, pepper, soy sauce, pepper and cinnamon.

4. Cook over high fire until the soup is completely boiling, and add bean paste, oyster sauce, onion and rock sugar.

5. Cover the pot and simmer for about 60 minutes.

6. Then send it into a steaming oven, and choose the steaming mode, 100 degrees 90- 120 minutes.

7. Take hot oil out of the pan, add rock sugar, simmer until golden brown, add the screened soup, and turn off the fire after the color is deep.

8. Pour it on the pork elbow, sprinkle some cooked white sesame seeds and serve!

Tips:

1. Cook the sugar slowly and patiently. When the syrup becomes sticky, frothy and begins to turn golden yellow, watch carefully and be careful not to burn it.

2. In the process of stewing, turn the pig's elbow a few times. If the soup can be completely submerged, it is unnecessary.

3. If there is soup stock at home, you can add a small bowl when stewing pork elbow, which is better! The remaining soup can be sieved and stored!
