The traditional industrial pectin production method is acid extraction, and the acid used can be sulfuric acid, hydrochloric acid, phosphoric acid, etc. Sulfuric acid can also be used to improve the color of pectin. The basic principle is that pectin can be hydrolyzed in dilute acid solution, and the original pectin in the peel is hydrolyzed into water-soluble pectin, so that pectin can be transferred from orange peel to water phase to generate water-soluble pectin. Then pectin is separated by precipitation or salting-out, and it is generally extracted by metal salting-out or organic solvent (ethanol) precipitation in industry.
