Cuisine of Monterrey
The cuisine of the city of Monterrey and the surrounding area is heavily influenced by traditional Jewish and Sephardic styles, as the earliest settlers here were the crypto-Jewish Luis de Carvajal family.
Monterrey's specialties include crumbled eggs, a dish made with dried chicken and eggs, sometimes seasoned with spicy salsa. Another specialty is roasted suckling lamb, which is used before grazing, but the Five Books of Moses (the first five books of the Hebrew Bible) forbid the kosher cooking method of piercing the lamb with a metal rod and grilling it over coal or charcoal. There is also the roasting of a suckling pig, which of course is also forbidden by the Five Books of Moses, and therefore it is necessary to know whether or not the diner is Jewish.
