Rubbing fish noodles, also known as rubs, is a unique traditional pasta snack in Zhangye City, Gansu Province. It is named after the shape of its finished product is thick in the middle and pointed at two ends, which resembles a small fish. Although the method of kneading fish is a little complicated, it tastes good and delicious. You can eat it dry or stir-fry.
Specific practices are as follows:
1, knead dough; The surface must have a proper softness, neither too soft nor too hard. Roll the dough to about 5 mm, not too thin.
2. Stripes; Cut the rolled dough into strips. About 5 mm wide, twisted into a cylinder.
