Why do you want to cook eggs with local dishes on March 3?

This is a folk tradition, which originated in the Spring and Autumn Period and the Warring States Period (also known as the Three Kingdoms).

During the Spring and Autumn Period and the Warring States Period, there was a highly respected doctor named Hua Tuo. One day, while collecting herbs, Dr. Hua Tuo was caught in heavy rain and took shelter in an old man's house. Seeing the old man's headache, dizziness, pain and embarrassment, Hua Tuo diagnosed the old man, picked a handful of shepherd's purse in the old man's garden, and asked the old man to take juice and boil eggs to eat.

The old man obeyed, took three eggs and recovered. After the story spread, people followed suit. Because Hua Tuo treated the elderly on March 3rd, the dish of cooking eggs with rice on March 3rd gradually spread, forming a folk tradition.

Boiled eggs with shepherd's purse is a dish, which belongs to home cooking. The main raw materials are shepherd's purse and eggs, and the main ingredients are edible oil and refined salt. This is simmered.

1. Take the eggs out of the refrigerator and put them in cold water for cooling 1 min (to prevent the eggs from cracking after being cooked); Then turn on the high fire, close the lid and cook (turn to medium fire and add water after boiling) for 7 minutes, and turn off the fire 1 minute; Finally, take out the eggs and break them one by one.

2. Wash the shepherd's purse and blanch it in boiling water until the soup becomes discolored and thickened, and take out the blanched shepherd's purse.

3. Pour shepherd's purse juice into a bowl containing eggs, sprinkle some salt to taste, and let the eggs soak in the juice for a day (so that shepherd's purse juice can fully enter the broken eggshell) before taking out.
