Why is West Point making more accurate than Chinese dim sum?

The baking process is a chemical and physical change, and some materials, though not used much, play a vital role, such as yeast, such as Peng Fa. A little deviation in use may be only one or two grams, but in the end it may be a drop in the bucket. So West Point is much more accurate than Chinese dim sum.
