Can Fujian old wine be used as cooking wine?
Fujian old wine is brewed with glutinous rice as the main raw material and red yeast as saccharifying starter. After more than three years of storage, it has a strong aroma and a mellow taste. It is a semi-sweet yellow rice wine. 1999 was awarded the title of "China Time-honored Brand" by the Ministry of Internal Trade.
Brewing technology
Fujian old wine is brewed by traditional unique technology, with the above-mentioned glutinous rice as saccharified koji, and the famous Gutian red yeast and medicinal white koji with more than 60 kinds of precious Chinese medicines. Ferment at low temperature for a long time in natural climate and cultivate flavor in winter. After squeezing, neutralizing and sterilizing, the wine is sealed and aged for 3 to 5 years, so that its aroma overflows, and finally it is carefully blended to form a unique product style.
