Why do the Guangzhou people call the oil angle as egg scatter?
There are two meanings of "Egg Scatter" in Guangzhou:
1. Egg Scatter is a famous traditional snack in Guangdong Province, which is made of flour, glutenous flour, egg and lard rolled into a wok to be fried, and when it reaches a light yellow color, it will be lifted up, and then dipped in malt sugar to be eaten.
2. In Cantonese, it is a timid and fearful person or a small person who has no future, taking the character of "not tough enough".
Guangzhou people have the custom of opening a frying pan before the Chinese New Year, frying fried piles, eggs, oil horns, etc., which means that the coming year will be a year of prosperity.

"The wok is boiling!" Every year on the 24th day of the Chinese New Year, many traditional Guangzhou people still like to make "oil woks", that is, frying oil horns, pan-fried piles, egg scatters, smiley jujubes, sugar rings, salted water horns, bean paste horns and other foodstuffs in oil.
With the accelerated pace of life, many local families no longer knead the dough, roll the skins and wrap the fillings at home, but choose to buy semi-finished or finished products from bakeries in a new way to pray for "oil and moisture, fullness and abundance" in the coming year.
All kinds of deep-fried cakes are not only crispy and delicious, but also have good meanings, and almost every kind of deep-fried cake has a unique jingle. The first step is to stir-fry the glutinous rice grains, and then the children manually sort out the 'rice flowers' and husks that cannot be separated by high temperature; the adults then pour the separated rice flowers into the sugar gelatin, which is made by boiling sugar and water, and stirring it constantly.
"The most interesting thing is that the adults have to knead the rice flower candy into a ball while it is still hot to make the filling. In order to cool down, they first put their hands into the cold well water and then hurriedly kneaded the dough, but it was still often so hot that they wowed, which was very funny." Uncle Ye said with a smile.
After the filling is made, flour and water are used to make the crust, which is wrapped around the filling before being rolled in sesame seeds and fried in boiling oil.
In Uncle Ye's opinion, the flavor of the year when I was a child was when my neighbors would come to visit each other to help fry the oil angle, frying piles, and talking about their families, and when the children would make trouble together and fight to steal food.
Additionally, buying "winter fruits" at the grocery store was also a "signal" that the New Year was approaching when I was a child. Every New Year's Eve, there would be a few large glass jars filled with snacks such as jujubes and cow's ears at the food store.
