What rice is zongzi made of glutinous rice?
Glutinous rice is also called Jiangmi, but the names of the north and the south are different. Glutinous rice is the protagonist of zongzi. Zongzi are mostly made of glutinous rice, so round glutinous rice should be chosen for making zongzi. Round glutinous rice is more sticky and waxy than long glutinous rice.
Black glutinous rice is made from the skin of maple leaves and their tender stems, mashed in a mortar, air-dried slightly, and then soaked in a certain amount of water.
