Tofu, with the reputation of "the highest food", originated in Huainan. According to textual research, tofu was created by Liu An, the king of Huainan in the Western Han Dynasty. 2 100 years ago, Liu An, the grandson of Liu Bang, Emperor Wu of the Han Dynasty, established Shouchun, with Huainan as its capital, and reigned for 42 years. Liu An is a good man. In order to get the elixir of life, he recruited thousands of people, including Su Fei, Li Shangyin and other eight famous people, known as the "Eight Heroes". Eight Men often gather in Chushan, today's Eight Men Mountain, to talk about immortals and Taoism, and write books and biographies. On one occasion, while preparing ingredients for an alchemist, Liu An accidentally dropped gypsum into milky soybean milk. Soon, a miracle appeared, and the pure white soybean milk gradually condensed into a flocculent shape, and then turned into fresh and tender tofu. Liu An's quest for longevity pills failed, but he accidentally got a delicious food-tofu, which can be described as "intentional planting of flowers, unintentional planting of willows." Bagong Mountain has thus become the birthplace of tofu in China.
The beauty of Bagongshan tofu lies in the spring water. There are many famous springs in Bagong Mountain, such as Pearl Spring and Yulu Spring. Spring water is clear and sweet, inexhaustible all year round, and contains a lot of minerals beneficial to human body. At the same time, the surrounding farmers have the skills of making tofu handed down from generation to generation, which makes the tofu in Bagongshan unique and enduring. Nowadays, there are more than a thousand kinds of tofu suitable for all ages, and the "Tofu Banquet" made of Bagongshan tofu has become a unique first-class banquet in Huainan. Because the plant protein contained in tofu contains 8 kinds of amino acids necessary for human body, it has certain medical and health care functions and is recognized as "international health food" all over the world.
Tofu is a traditional food in China, which was called "fermented milk" and "Richie" in ancient times, and was called tofu only after Tang and Song Dynasties. After visiting Japan in the Tang Dynasty, Jian Zhen and monks brought tofu technology to Japan, and Japan still regards Jian Zhen as the founder of tofu making. Tofu was introduced to Korea in Song Dynasty, and 19 century was introduced to Europe, Africa and North America. Now it has become a world food.
