How to make cakes?

Shortbread is one of the representatives of Shaanxi local traditional snacks. Shortbread was first created in the Tang Dynasty and was once known as "the first point in the Western Qin Dynasty". They have lasted for thousands of years and have been passed down to this day.

Crispy cakes developed from thousands of pancakes in the Tang Dynasty, and now they are formed through continuous and meticulous improvement by chefs. There are many kinds of shortbread, which are mainly divided into onion shortbread, thousand-layer shortbread, matcha shortbread, duck shortbread, fruit shortbread and spiced shortbread. After the pan, the pastry is layered, crisp but not broken, oily but not greasy.

In the streets of Xi 'an, there are many stalls and shops selling shortbread, and people who want to buy delicious shortbread are often lined up in the stalls and shops. Xi has a long history. There are many tourists from other countries every year, and shortbread is also very popular with tourists.

Shortcakes are made in three steps. There are four processes to make a perfect shortbread, namely, making shortbread, kneading dough, making cakes and frying. The first step is to make cakes.

1, make crisp, put oil in the pan, add flour and stir slowly after the oil is hot. Stir-fry the flour until it changes color, and turn off the heat. Don't stop stirring the spoon during this period, because there is residual temperature to prevent burning. The pastry is fried.

2. Mix the dough, melt the yeast with warm water, let it stand for three or five minutes and then add it to the flour. Then add a little water to make the noodles similar to the earlobe. Put it in a warm place and wake it up twice as big. Insert your finger in the middle of the flour. Just don't retract.

3. Make a cake: After the hair is exhausted, pull it into a batter of similar size, then roll it into a tongue shape, then spread it evenly with fried pastry, and then roll it up from top to bottom. When it is all rolled up, put it aside and wake up for about ten minutes. After waking up, roll the rolled blank into a strip, pick it up while rubbing it and lift it twice, as long as possible. Finally, roll up the strips and make a cake.

4, frying, baking pan preheating, roll the noodles into a circle, not too thin, thicker is better. Grease the electric baking pan, add the cake, bake for about 2 minutes, turn it over, and the cake will be crisp after discoloration.
