raw material formula

flour 15g, eggs 6g, sugar 7g, sugar syrup 6g, soybean oil 5kg (consumption 6g), green shredded pork 15g, and appropriate amount of water

Production method

1. Put the flour on a chopping board, dig it into a nest in the middle, add some water (or not) after the eggs are shelled, break it up and pour it into the flour, stir it evenly, and knead it into a suitable hardness.

2. pour 1kg of soybean oil (or big oil can be used) into a large pot, and cook until it is 5-6% ripe. Put the cut noodles in the oil pan for several times, and fry them until they are light yellow, and then fish them into a plate.

3. add a proper amount of clean water (about 5g) into another pot, add sugar and boil it to 116 ~ 118℃, then continue to boil it to 116 ~ 118℃ (it can be boiled in summer and tender in winter), and dip your fingers in the sugar juice to make it into 13mm-long filaments.

4. pour the boiled sugar juice evenly on the fried noodles, mix the sugar juice while it is hot, pour it on the chopping board and flatten it into a square or rectangular block with a thickness of 4 cm, and then sprinkle the green and red silk evenly on the plane.

5. cut the cooled finished product into a rectangular box with a width of 5 cm and a length of 7 cm with a knife and put it on the plate.
