Production process
The processing of green tea is simply divided into three steps: killing, kneading, and drying, of which the key is killing. Fresh leaves through the killing, the enzyme activity is blunted, containing a variety of chemical components, basically in the absence of enzyme influence conditions, the physical and chemical changes by the action of heat, thus forming the quality characteristics of green tea.
Killing
Killing plays a decisive role in the quality of green tea. Through high temperature, destroy the enzyme properties of fresh leaves, stop the oxidation of polyphenols to prevent the leaves from reddening; at the same time, evaporate part of the water inside the leaves, make the leaves soft, and create conditions for kneading and shaping. With the evaporation of water, fresh leaves with grass gas in the low-boiling point of aromatic substances volatile disappear, so that the aroma of tea leaves to improve.
Killing

Frying

Calming the Book

Drying
Sun-drying
It is sun-drying by sunlight. It is mainly distributed in Hunan, Hubei, Guangdong, Guangxi, Sichuan, Yunnan, Guizhou and other provinces have a small amount of production. Sun-dried green tea to Yunnan large-leafed species of the best quality, known as "Dianqing"; others, such as Sichuan Qing, Guizhou Qing, Gui Qing, E Qing and other qualities of their own, but not as good as Dianqing.
Steaming

Steamed green
Green tea is the earliest tea in history. Ancient human collection of wild tea tree buds and leaves dried collection, can be regarded as the beginning of green tea processing in a broad sense, at least three thousand years ago. The purpose of drying is to evaporate the water and organize the shape to give full play to the aroma of tea. Drying methods, there are three forms of drying, frying and sun-drying.
