Where is the specialty of duck ditch sticky bean bag?
Duck ditch sticky bean bag is a specialty of Acheng, Harbin, Heilongjiang.
Duck ditch sticky tofu, also a traditional food of Manchu ancestors, is steamed with millet (yellow rice) as skin and kidney beans as stuffing, which should be the earliest convenience food in China. You can eat it frozen (eat bean buns) or hot (dip it in bean buns), so the staple food of Nuzhen in winter is probably this kind of small sticky bean buns in the war to destroy Liao and cut Song.
In many people's memory, "sticky" and "year" are linked together. According to the Manchu tradition, after the 23rd day of the twelfth lunar month, every household must wash rice, wash rice with warm water, grind it into yellow wheat, and use a pottery cauldron or two pots to make dough. After a day or two, the pot will smell sweet and sour, which tells adults that it is time to pour the bean paste. Bean stuffing is mainly kidney beans, and adzuki beans are also acceptable. Then you have to wrap bean bags. The size of the bean bag reflects the "transmission" of a family life. Too big makes you lazy, too small doesn't count. The first pot of bean curd brain comes out of the pot, dipped in sticky syrup, and invited neighbors to taste it. This is a test of all previous techniques. Smooth surface, moderate skin thickness, fragrant and delicious, appetizing, is a high evaluation of sticky tofu.
The origin of sticky bean buns is similar to that of traditional ones, and this custom is related to the production level. Millet (Euphorbia humilis) is drought-tolerant and has a short maturity. In Northeast China, especially in Heilongjiang Province, it is the earliest crop for autumn harvest. And people want to taste its food, basically have to wait until the Spring Festival. First, as a unified grain distribution, it is useless to worry, because there are many checkpoints such as autumn harvest and weighing. Secondly, in the era of planned economy, steamed bean curd with rice is a sign of improving life, while Chinese New Year is a period of concentrated improvement, so we can't worry. But there are times to enjoy this kind of food. Every busy season in spring, summer, autumn and winter, farm work is tight and tiring. The production team collectively washes rice, mostly steamed rice cakes. The cooked kidney beans are first spread on the steamer, and with the increase of heat, yellow wheat is sprinkled layer by layer, and then a layer of kidney beans is spread. In this way, the rice cake with a thickness of more than half a foot has become the expectation of farmers in the busy farming season. As long as there are delicious rice cakes, it is not a problem. Millennium cuisine has a thousand-year tradition, which is renewed by a group of farmers in Jinyuan and Yagou towns in their hometown.
The reason why Yagou sticky bean bag is famous1In the winter of 985, Chen Jinsheng, a villager from Xiaweitun, Guoyuan, Yagou Town, accidentally "scoured" too much rice. He had a whim: Why not carry it back to Harbin to sell it? He has a good reason. Since some people are willing to eat sticky bean bags sent by relatives, those who have no relatives will buy sticky bean bags to taste. When Harbin people taste it, he is not qualified to say "much" when he washes rice. As expected, Chen Jinsheng only ran a few times outside the road in winter, and more than 300 kilograms of sticky bean bags ran away, with a gross income of more than 200 yuan, almost the income of the production team for one year. In the second year, the number of teams selling sticky bean bags doubled, and the sales of sticky bean bags also doubled. Turning to 1998, Yagou Town was rated as "the first sticky bean bag town in China" by the Ministry of Agriculture. By 2004, 35% of the cultivated land in Yagou Town had been planted with sticky corn (the yield was much higher than that of rhubarb rice), and 2 100 farmers processed sticky bean bags, with a yield of 9 million kilograms and a profit of 9.5 million yuan. Products sell well all over the country. In 2005, in order to be bigger and stronger, Yagou Town allowed powerful private food enterprises to use the trademark "Yagou". Large-scale management and standardized production, one by one carrying the national traditional delicious sticky bean bags, in people's vision and memory, always shining like gold.
Seven villages, including Quandian Village, Yazhan Village, Yueji Village, auspicious village Village, Nanping Village, Goldman Sachs Village and Guangxin Village, Yagou Sub-district Office, Acheng District, Harbin City, Heilongjiang Province, now have administrative areas under their jurisdiction.
