Speaking of the delicious food in my hometown of Jiangxi, there are really countless! Salted duck, duck loin with soy sauce, fried meatballs, bacon and preserved fish, fried rotten fish and steamed meat powder are all essential foods for Jiangxi people in the New Year, among which fish rot is my favorite.
According to historical records, the history of fish rot in Jiangxi is called "wrinkled yarn", which originated in Dade period of Yuan Dynasty. After more than 700 years' development, "Crisped Fish Rot" has become a dish with local characteristics in Jiangxi, especially in southern Jiangxi. People often regard it as a necessary finale of a banquet to pray for family reunion and happiness.
Before the Spring Festival, as my mother's assistant, I really experienced the feeling of being a "chef". What I do is fish rot.
In order to do a good job of fish rot, my mother and I made a lot of preparations first. A 5-catty grass carp was decapitated, peeled and chopped into rice paste-I watched Clash Clash, and it was up and down, left and right, and the knife was flying for nearly an hour. Protein in fish is highly released, and the fish turns from blood red to milky white. Next, I'll tell you my secret recipe: according to 1 kg net fish, you should put two cents of salt, two ounces of sweet potato powder and four eggs. Put the sweet potato powder into a small bowl alone, mix it into paste with water, then pour this bowl of "lime powder" into a large basin of fish and stir it evenly, then shake it in the basin at high speed by hand. My hand turned like a gear and soon formed a "meat tornado". It took about half an hour to confirm that the semi-finished fish has been successfully prepared. At this time, my right hand seemed to fall off, completely losing consciousness. ...
Everything is ready except the pot. When the pot temperature of 4 kg cooking oil reaches the boiling point, I hold the fish in my hand, squeeze out a small ball, shovel it gently with a small spoon and plop it into the oil pan. It only takes seven or eight seconds for the fish rot to swim on the oil surface. Three minutes later, I grabbed the spoon and turned all the rotten fish over. Oh, the white "pebbles" gradually turned into small golden balls, and their value suddenly doubled!
Every year when I go back to my hometown, I like to have a look in the wild. Walking on a familiar field path, I saw green red flowers and yellow rape flowers, smelled the fragrance of the long-lost soil, and felt that I was back to my childhood. The land is still that land, and the person is still that person. Maybe they have been away for many years and their lifestyles are different. It seems that what they say is not at the same level. Even so, every time I return to my hometown, I always have a familiar feeling, and I can always see some different changes, perhaps just the embellishment brought by the long-awaited new socialist countryside. In fact, what I read is still too slow, which may be the reason why I don't want to stay at home for too long. I usually go home less than a week.
