What is the brewing technology of fruit wine?
First, traditional fermentation method
Pulping fresh, mature and non-rotten fruits into pulp or juice, adding sugar and high-yield distiller's yeast for fermentation, fermenting and squeezing 10- 15 days, filtering, clarifying and sterilizing to obtain fruit fermented wine. For example, brewing fruit wine, that is, brandy, the fermented fruit wine can be distilled by small-scale shochu equipment. Ordinary fruit can be used to make wine. The more sugar, the higher the yield.
Second, the soaking method
Soaking method, also known as soaking wine, is a long tradition in China and an important part of TCM health preservation. Fruit soaking wine can add high-alcohol to rock sugar and fruit, which is more suitable for fruits with less juice, such as hawthorn, jujube, bayberry, litchi and cherry.
Thirdly, fermentation and soaking are combined.
With this combination method, there are three ways to brew better quality fruit wine:
