The Origin and Customs of Dumplings

The original name of dumplings is "Jiao Er", which is rumored to have been first invented by Zhang Zhongjing, the sage of medicine in China. When Zhang Zhongjing was the governor of Changsha, he used to treat people's illnesses. After Zhang Zhongjing returned to his hometown from Changsha in time for the winter solstice, he went to his hometown on the bank of Baihe River and saw many poor people suffering from hunger and cold, and their ears were frozen.

So he wrapped lamb and some cold-expelling herbs in dough to make the ears look like ears, and the ears of the townspeople were cured after they consumed this kind of food. From then on, the townspeople and their descendants imitated the production and called it "dumpling ear" or "dumpling", and there are some places called "flat food" or "hot noodle dumpling". "

There are many famous dumplings from all over China, such as shrimp dumplings made of clarified flour in Guangdong, dumplings in sour soup in Xi'an, pork and cabbage dumplings in Hengshui, pan-fried dumplings in Shanghai, steamed dumplings with crab roe in Yangzhou, small dumplings in high soup in Shandong, dumplings on the old side of the river in Shenyang, and Zhongshui dumplings in Sichuan, all of which are very popular varieties.

When wrapping dumplings, people often pack gold ruyi, brown sugar, peanuts, dates and chestnut coins into the filling. Those who eat Ruyi and brown sugar will have sweeter days in the coming year, those who eat peanuts will live a long and healthy life, those who eat jujubes and chestnuts will give birth to a son early, and those who eat coins will have a constant source of wealth.
