How is Shanxi mature vinegar produced?

Shanxi over-mature vinegar is made from high-quality sorghum, barley, peas and other grains by steaming, fermentation, smoking, drenching and drying. It is one of the four famous vinegars in China with a history of more than 3,000 years. It is known as "the first vinegar in the world" and has five characteristics: color, fragrance, alcohol, concentration and acidity. Shanxi mature vinegar is red in color, tender, sour, fragrant, sweet and fresh. Shanxi mature vinegar is rich in amino acids, organic acids, sugars, vitamins and salts. Shanxi over-mature vinegar is Daqu made of sorghum, bran, chaff and water as main raw materials, and barley and peas as saccharifying and fermenting agents.
