How to detect fat?
For the fat content in food, soxhlet extraction, acidic ether extraction and alkaline B are generally used.
Ether extraction.
Soxhlet extraction method:
After acid hydrolysis, the sample was dried. The extractor soaks the sample in boiling solvent to extract most of the fat. Then, the sample was lifted to the surface of the solution and washed with solvent to extract the residual fat in the sample. After the extraction is completed, the solvent is distilled off, the extraction cup is dried and weighed. The quality difference before and after extraction in the extraction cup is the quality of fat.
Acid hydrolysis method:
After acid hydrolysis, the sample was extracted with ether, and the total amount of free and bound fat was obtained by removing the solvent.
