Tofu is not harder than other vegetarian dishes. Why does it take longer for human body to digest?

Vegetables are mainly composed of cellulose, with a small amount of protein, carbohydrates, vitamins and inorganic salts.

Humans can only digest non-cellulose parts. Cellulose cannot be decomposed and absorbed. So the digestion is faster. Tofu is mainly composed of plant protein, which takes time to digest.

If protein's digestion time is calculated according to the same weight, there is no difference between them.

On the other hand, if you eat the same weight of vegetables and tofu, you will know which is more "full".
