Liquor (mbth: Liquor and Spirits? ), is a distilled liquor made from grain as the main raw material, Daqu, Xiaoqu or bran koji and yeast as saccharifying and fermenting agents, through cooking, saccharification, fermentation and distillation. Also known as shochu, testing fate, burning knives. The wine is colorless (or yellowish) transparent, pure in aroma, sweet and clean in mouth and high in alcohol content. Because there are many kinds of brewing raw materials, different brewing methods and different aroma characteristics of liquor, there are many ways to classify liquor. According to the latest national standards, distilled liquor can be divided into liquor and other distilled liquors. The definition of liquor is: all kinds of liquor brewed with distiller's yeast and starch (sugar) as raw materials through cooking, saccharification, fermentation, distillation, aging and blending.
Liquor classification:
It should be divided into: synthetic wine, blended wine and distilled liquor. Synthetic wine is a liquid composed of alcohol, essence and water. Blended wine is a liquid mixed by base wine, alcohol, essence and water. Qu liquor is concentrated by fermentation and distillation brewing process. "Whether it is produced by fermentation and distillation" and "whether chemical spices are added" are the important basis for distinguishing other liquors, and whether it is fermented by "cellar" is the benchmark for judging cellar liquor.
