How to make gypsum tofu
Soak beans. Grinding bean curd soaked in clear water the night before. If you don't have time to soak, soak on the same day. You can grind the beans into watercress before soaking, and the time will be shorter. Clean the soaked beans for later use.

Grinding bean curd. If you don't have a stone mill at home, you can use an unheated soymilk machine or a wall breaker (you must not use the kind of soymilk machine that beats soymilk while heating). The stirring function of the wall-breaking machine I use is to add a certain amount of water to two tablespoons at a time, not too much water, the thicker the better. Stir for 2 minutes, don't worry, grind it fine.

Filter soybean milk. After grinding, filter the soybean milk with sandbags. You can add water once when filtering, not too much water. The pulp doesn't have to be much, but it should be thick, so the tofu will be fine.

Baked soybean milk. Boil the filtered soybean milk to remove the foam (be careful not to leave it when it is burnt, it is easy to overflow. ), turn off the fire as soon as it is turned on.

Mud washing. In the process of cooking, prepare gypsum water (be sure to leave a small bowl of raw soybean milk to dissolve gypsum powder before cooking soybean milk), press a catty of beans and a spoonful of gypsum powder (if my spoon is not big, it will be half a spoonful), and the gypsum water must be stirred evenly, poured into a large basin and fished out from the sediment below. When the soybean milk is boiled, it will cool to about 80 degrees (5 to 8 minutes after turning off the fire). Then put the soybean milk into two pots filled with gypsum water (mix the gypsum water evenly before washing), let it stand for three to five minutes, and insert it with chopsticks. When chopsticks fall, tofu is just right. When the chopsticks fall, there will be less gypsum. You have to sprinkle some gypsum water on them, and then insert the chopsticks in later to observe the changes. After finishing, it usually takes 20 to 30 minutes to stand. If the plaster is not enough and the tofu is tender, it will take a long time to prepare the bag.
