Why is breakfast called premature delivery?

"Premature delivery" is a common name for breakfast in Wuhan. People often say "Guangdong eats, Shanghai wears, Wuhan eats and Wuhan wears". Wuhan is located in central China, where customs and habits blend with the southeast and northwest, so there is a saying that "customs and habits have five uses".

Because of the geographical environment and economic activities, Wuhan people have long developed the custom of eating outdoors "prematurely". Wuhan consists of Hankou, Hanyang and Wuchang. Hankou has always been famous for its commercial prosperity. In the morning, people will rush to the market and eat at the snack bar before breakfast at home. The word "immature" first appeared in Zhi Zhu's Ci in Hankou during Daoguang period of Qing Dynasty. Even today, people in Wuhan still keep this custom, and due to the accelerated pace of modern life, the special geographical distribution of the three towns in Wuhan, and the distance between the places where people work and study and the residential areas is getting farther and farther, this custom of "premature birth" is on the rise. Snack bars in Wuhan are extremely developed, streets and alleys can be seen everywhere, business is booming, and diners are full.

Breakfast in Wuhan is not only convenient and time-saving, but also rich in patterns, with both North and South flavors. There are fried dough sticks, noodle nests, roasted plums, soup packets, bean skin, Regan Noodles, beef noodles, noodles with dregs, shredded beans, jiaozi and glutinous rice balls. Dry and thin, delicious.

Regan Noodles is a popular food for Wuhan people "prematurely". Cheap and affordable, you can comfortably fill your stomach for a few cents. It is said that in the early 1930s, there was a man named Li Bao in Chang Di Street, Hankou, who sold bean jelly and noodle soup in Guandi Temple. One day, it was very hot and the noodles were not sold out. Li Bao was worried that the noodles would go bad, so he cooked the remaining noodles and put them on the chopping board. He accidentally touched the sesame oil pan and spilled oil on the noodles. Li Bao simply mixed sesame oil into noodles and then cooled them with fan strips. The next morning, Li Bao scalded the cooked noodles mixed with sesame oil with boiling water several times, filtered off the water, put them in a bowl, and added seasonings such as chopped green onion. Suddenly the fragrance overflowed, and people rushed to buy it and ate it with relish. Someone asked what noodles he was selling, and Li Bao said "Regan Noodles". Since then, Regan Noodles has gradually become an indispensable food for Wuhan people "prematurely".

Regan Noodles in Wuhan, Daoxiao Noodles in Shanxi, Yifufian in Guangdong and Guangxi, Dandan Noodles in Sichuan and Zhajiang in the north are also called the five famous faces of China.

Three fresh bean skin is another staple food of Wuhan people "prematurely" and a traditional snack of Wuhan people. In the early years, people used mung beans and rice to grind, spread skin, wrap glutinous rice and diced meat on holidays, and fry them into holiday delicacies, which later became ordinary breakfast. In the process of making bean skin, it is required that the skin is thin, crisp and straight, so that the fried bean skin is crisp outside and tender inside, oily but not greasy. Sanxian bean skin is named after fresh meat, eggs and shrimps in the stuffing. Old Tongcheng is famous for its three fresh bean skins. There are not only meat, eggs and shrimps, but also pork hearts, pork bellies, mushrooms, magnolia slices and barbecued pork. The stuffing is very delicate and the frying is also very fine. After frying, it is shiny, yellow and fragrant.

Face pits are one of the daily necessities for premature babies in Wuhan. Mianwo is a kind of rice flour as raw material, plus chopped green onion and Mianwo. It is said that it was created by a biscuit vendor in Hanzheng Street during Guangxu period of Qing Dynasty. The fried noodles are golden on both sides, crisp outside and soft inside, and crisp in the nest, which is deeply loved by Wuhan people.
