In the Eastern Han Dynasty, vinegar was not only edible, but also began to be used as medicine. According to legend, Zhang Zhongjing, a famous doctor in the Eastern Han Dynasty, used "Huangqi Shaoyao Guizhi Kujiu Decoction" to treat yellow sweat (the name of the disease is edema of the head, face and limbs, yellow clothes sticking like cypress juice, backache and unfavorable urination). Tao Hongjing's "A Record of Famous Doctors" said that vinegar can "eliminate carbuncle, reduce swelling, dissipate moisture, and kill evil spirits". After the rise of alchemy, bitter wine was quickly used by alchemists. It is said that they made a solution with bitter wine and saltpeter, which actually dissolved many minerals (turned into water), such as cinnabar, thorn stone, realgar and so on. (This is greatly exaggerated, of course), so it became the main solvent of "water alchemy". The alchemist also dissolved some minerals in vinegar, which is called "Zuo Wei Huachi" and is also an indispensable medicine in alchemy.
At the latest in the Sui and Tang Dynasties, China not only mastered the continuous process of making vinegar with grain as raw material through direct koji-making and fermentation, but also made vinegar with more diverse raw materials, indicating that extensive attempts were made, so the varieties of vinegar were extremely rich. According to Su Jing's newly revised Materia Medica, there were not only grain vinegar such as rice vinegar, wheat vinegar, bran vinegar, koji vinegar and distiller's grains vinegar, but also sweet and sour vinegar with caramel as raw material and fruit vinegar with peach, grape and jujube as raw materials. Of course, the most important thing is rice vinegar, its taste is the most "sour", and only it can be used as medicine.
