The famous Langya crisp sugar in Chuzhou, formerly known as "flour sugar" and "Dong sugar", originated in the late Ming Dynasty. It is made of pure white sesame, white sugar powder, Fuqiang powder, maltose, etc. The candy produced has uniform thickness, paper-thin bone, clear section, spiral shape and milky white color; The entrance is soft and delicate without impurities, and the fragrance is crisp and rich, sweet but not greasy. The days praised by literati: "The fragrance attracts foreign guests from the clouds, and the taste attracts immortals from the cave", which is rich in nutrition and suitable for all ages in Xian Yi. Named after Langya Mountain, it is a traditional food in Chuzhou. Its "sweet but not greasy, waxy but not sticky, crisp but not broken" is suitable for all ages in Xian Yi and is deeply loved by the masses. Crispy sugar is also called "flour sugar", "Qin oil crisp sugar" and "Dong sugar". At the end of the Ming Dynasty, Chuzhou workshop began to use wheat flour, sesame seeds and sugar as raw materials, which were baked and processed, commonly known as "flour sugar" (small packets of sugar). In the early Qing Dynasty, two masters, Qin and You, wrapped glutinous rice and fine bones to make flour candy, so it was also called "Qin You Crisp Sugar". Later, a master named Dong carefully improved Qin Oil Crispy Sugar, and layered glutinous rice with flour sugar, which was called "Dong Sugar". Another scholar wrote: "During the Chongzhen period of the Ming Dynasty, Dong Xiaowan, a famous geisha in the south of the Yangtze River, was good at cooking, making flower dew and making sugar cakes. Once a talented person was ill, Dong Xiaowan was ingenious. He used sesame seeds, sugar, fried noodles, syrup, sesame oil and other raw materials to make square crisp candy and gave it to Maoxiang. " Its sugar is "crisp and sweet, appetizing and refreshing". After spreading among the people, people called this kind of sugar "East Sugar". "Records of Chongchuan Culture" also records: "Dong Tang was made by Dong Xiaowan, the concubine of Superman Mao." In the early years of the Republic of China, there were many shops and workshops in Chuncheng to make cakes. Zhang Sanyi, Bian Yuanchang, Cao Hengxing and other stores make crispy candy (also known as Dong Tang) which is quite famous.
