The practice of douchi

I think the practice is as follows:

1. Soak soybeans or black beans overnight, wash the beans and simmer on low heat.

2. Cover the cooked beans with douchi grass for fermentation. Put the beans flat on the soybeans and compact them, then press the douchi grass with a heavy object.

3. Chop the fermented lobster sauce and stir-fry it quickly with pepper, pepper, sesame, spiced powder and ginger and garlic.

4. Add white wine, season with salt and mix well.
