Ingredients: 800g flour, appropriate amount of brown sugar, appropriate amount of sesame paste, appropriate amount of dried fruit and baili liqueur, yeast 10g, water 420g, and appropriate amount of jujube.
Tools: Jiuyang Chef Machine, Haier Nen Oven, Western-style Flower Knife.
Time: 3 hours (including fermentation)
The practice of steaming old Beijing reunion cake;
1. First, mix 800g of dry flour and 10g of yeast with 420g of clean water, then put them all into the chef's jar, stir them evenly by hand, and leave them for half an hour without drying noodles.
2. Stir the chef's noodles at low speed for 5 minutes. The picture below shows the stirring dough type, which is fermented to twice the size and divided into 5 parts for later use.
3. Prepare stuffing: soak dried fruit in wine, boil sugar water, cook sesame paste, and spread the stuffing on the crust, three layers.
4. Roll out a rectangle around the cake blank, and layer by layer as shown in the figure: then cut and press the rectangular cake blank, open the lid, pinch the edge and pinch the lace. The sun gap is decorated with dates, the bamboo curtain is coated with oil, put on the reunion cake, and steamed in the oven 1 15 degrees for one hour, and it is cooked.
