Making Japanese tofu
The raw material for making Japanese tofu is soybean. After a series of processes such as soaking, grinding, boiling and filtering, soybean milk was finally obtained. Next, heat the soybean milk, add coagulant (such as gypsum or calcium sulfate) to solidify it, and then press it into blocks to get tofu.
Pay attention to the following points in the process of making tofu:
The temperature of soybean milk should not be too high, otherwise the coagulant will fail.
The dosage of coagulant should be appropriate, too much will lead to tofu hardening, too little will lead to tofu is not easy to solidify.
Pay attention when pressing tofu, too light will lead to tofu loosening, too heavy will lead to tofu rupture.
Classification of Japanese tofu
According to the making method and shape of tofu, Japanese tofu can be divided into the following categories:
Tender tofu: when making, the dosage of coagulant is less, and the tofu tastes soft and delicate.
Chinese-style tofu: when making, the dosage of coagulant is more, the tofu is hard and the taste is rough.
Papaya tofu: papaya enzyme is added in the production process to make tofu easier to digest.
Frozen tofu: Freeze tofu and thaw it to make it firmer.
How to eat Japanese tofu
Japanese tofu can be eaten directly or used as the main raw material of dishes. The following are some common Japanese tofu dishes:
Tofu soup: cut tofu into small pieces, put them into the soup, add chopped green onion, kelp, fish fillets and other seasonings, and cook until the tofu is cooked.
Tofu baking: cut tofu into small pieces, bake it with vegetables and meat, and add seasonings such as soy sauce and miso to make delicious tofu baking.
Tofu salad: cut tofu into small pieces and add vegetables, fruits, etc. Pour salad sauce on it and make a healthy and delicious tofu salad.
