Why is sour soup hot?
Sour soup is a kind of food invented by Manchu in modern times. Because it is located in the northeast, many people mistakenly think it is a specialty of the northeast, but it is not. Experts believe that sour soup itself has a special sour taste and is a special food, but it is easy to be polluted during fermentation and storage. Moreover, toxins such as aflatoxin can't be destroyed by high-temperature boiling, so consumers are easy to be careless, thinking that high-temperature disinfection is harmless to the body, and their own sour taste also masks the moldy taste, so poisoning will occur when eaten in large quantities.
As early as 1960s, some scholars found that this traditional food would cause serious food poisoning, and even after eating spoiled fermented rice flour, the poisoning mortality rate was as high as 40% ~ 100%.
