Steps
1. Stir in the flour and salt, add in the water and the noodles, and let the dough stand for 1 hour.
2. Wash your hands and place the dough in a larger stainless steel bowl, pour in enough water to cover the dough; rub and squeeze the dough with your hands, kneading for about 10-15 minutes.
3. At this point, the water will become very mixed, as the starch in the dough dissolves into the water. And the dough will turn into a sticky cotton wool-like mold, which is what we often call gluten.
The starch water on the way settles in the refrigerator for at least 5 hours. The starch and water will separate. Carefully scoop out the water and pour it away, leaving the starch behind, stirring well and setting aside.
4. This is the gluten.
5. Prepare another pot of water, put the gluten into the kneading wash, the water is very cloudy, then pour the pot of water to the starch water.
Keep washing until the gluten is kneaded and the water is still clear.
6. Put the cleaned gluten into a large bowl, steam it for 30 minutes, then remove it from the drawer and let it cool, then cut it into diamond-shaped pieces or cubes.
7. Precipitated starch water is best filtered, so as to make a better taste of cold skin.

9. I used a 9-inch pizza pan, which proved to be very good. Grease it with a thin layer of oil, pour in a tablespoon of batter (batter just spreading over the bottom of the pan is good), and steam it in a boiling cage drawer for 2 minutes.
10. Make sure to cover the pot with a lid when steaming the cold skins, so that the texture of the skins will be better.
11. At this point, the batter in the pan will turn into cold skin; take the pan out and put it into the pre-prepared cool boiled water to remove the cold skin.

13. And so on until all the batter is made into cold skin. When stacking the cool skin, remember to smear the surface with sesame oil or salad oil to prevent bonding.
14. Cut the cucumber julienne.

17. Add soy sauce, salt, garlic water, hemp juice and vinegar.
18. Stir well, delicious cold skin is ready.

Tips
