How to press the surface

With the improvement of quality of life, many traditional ways have been replaced by mechanical equipment. I used to see old people cooking braised noodles, but now I use an electric noodle press to press fresh noodles, all of which are fresh noodles but have different tastes. In order to save manual service, some shops use electric dough presses. Everyone has their own unique noodle pressing methods and secret recipes. The fresh noodles and braised noodles taste similar, but there are still differences. Here is a detailed introduction to the braised noodles made by the old people. 1. Required food: wheat flour 500g, salt 3g, raw eggs 1 piece, cold water 1 10Ml.

Second, the process of braised noodles in life:

1. First, add raw eggs and salt into the wheat flour and mix well, then gradually pour in a proper amount of cold water. Because different wheat flour has different water absorption flow, the amount of cold water will be a little different. Then, knead the dough and knead it repeatedly to turn the wheat flour into a smooth batter. Three lights are the best for kneading dough, Yi Deng, one pot of lights and one hand. Finally, cover the prepared batter with a fresh-keeping bag and wake it for 30 minutes.

2. Then sprinkle a small amount of dry wheat flour on the control panel, then take down the proofed dough and knead it repeatedly, and then roll the batter into a solid chaotic skin with a long rolling pin.

3. Then roll the skin on the rolling pin and turn it back and forth. When turning, push hard and keep pressing, so that the messy skin will become thinner and thinner and become a large piece.

You have to change your perspective several times and repeat the above practical operation. Every time you change your perspective, you should drop some dry wheat flour on the big bowl to prevent the noodles from sticking. Finally, the thickness of the bedding face should be within 1mm, which is similar.

5. Then stretch the dough. Every time you stretch, remember to sprinkle some dry wheat flour to avoid sticking.

6. After stretching, you can cut the noodles with a dry knife. If you don't cut it skillfully, you must cut it into fresh noodles with the same width. After cutting, pull up each fresh noodle and shake off the dry wheat flour on it, so that the braised noodles are ready and the noodles can be cooked in the pot.

7. In the case of cooking noodles, put more cold water and wait until the water boils before cooking noodles. After the fresh noodles are cooked, they can be eaten with gravy.
