History of Chishuifang

According to historical legends, Gulin County, located on the Chishui River, is an ancient Yelang country. Yelang people are hardworking and brave. Maotai-flavor liquor brewed with local waxy sorghum and wheat is called "Chishuifang". Chishuifang wine has a strong aroma and lasting charm. Ming Di Zhu Yuanzhang sent Zhang to Yelang, and Zhang was praised after drinking Chishui Fang, so he brought it back to Zhu Yuanzhang. After drinking, the emperor praised Chishui Square and named it "Gongjiu". "Chishui Square", so its reputation spread far and wide, passed down from generation to generation.

Chishui flows through Yunnan, Guizhou and Sichuan provinces. In the basin, brewing has a long history. In ancient times, there were gouache in Han Dynasty recorded in Historical Records by Sima Qian, and now there are liquor brands such as Maotai, Langjiu, Tanjiu and LU ZHOU LAO JIAO CO.,LTD Co., Ltd., which account for 60% of the famous wines in China, so it is known as the wine river.

Brewing technology

Chishuifang, born on the banks of Chishui River where famous wines gather, inherits the quality of three famous Brewmaster altar wineries in China, and draws on Chishui Ganquan rich in various minerals. Adhering to the traditional method of 600 years, combined with the original microbial community along the Chishui River, the whole production process lasted nearly 5 years after adding raw grain twice, distilling for 9 times, fermenting for 8 times and extracting wine for 7 times. Maotai-flavor wine has a long aroma and lasting charm.

Chishuifang, which draws on Chishui Ganquan rich in various minerals, inherits the traditional ancient method for 600 years, combines with the original ecological microbial community along Chishui River, follows the traditional concept, inherits the ancient method for brewing, selects high-quality sorghum and wheat as raw materials, adheres to the orthodox fine technology, takes seven wines, eight ferments, nine cooks, and is meticulous, thus achieving the original sauce flavor. It has been sealed in Wujin altar for more than five years and carefully blended for many years. The strong, old and mellow sauce flavor has made Chishuifang, a unique sauce flavor.

Chishuifang, adjacent to Maotai and Langjiu, has the heritage of national wine and the quality of top-grade maotai flavor, and is called "the pearl of maotai flavor along the national wine river".
