Japanese rice balls recipe share
One winter, in order to escape the city's fickleness and poor air quality, I insisted on going to the suburbs to climb mountains with my colleagues every weekend. In the winter afternoon, away from the city, put down everything, sit on the ground, just enjoy the sun, is also the best enjoyment of life, right?
Time required: 20 minutes (not including the time to cook the rice)
Ingredients: freshly cooked white rice (moderate)
Seasonings: salt, white vinegar, dried plum, sesame seeds, seaweed, daikon, etc. (according to personal taste)
Step 1: Prepare the rice and the rice ball filling.
Note:
General rice with a little white vinegar, the rice will be more sticky, easy to wrap together. A lot of the market is white rice rice balls, but my personal taste, prefer to put some sesame seeds, cooked green beans, and chopped daikon in the rice, so that eating will be more flavorful.
Step 2: Make rice balls.
Place a piece of plastic wrap on the palm of your hand and put a small bowl portion of rice.
In the center of the rice, put as much filling as you want, such as dried plums
Wrap the rice and filling in the plastic wrap.
Step 3: Wrap the rice ball.
Remove the plastic wrap and stick a sheet or two of seaweed or shredded kombu on the rice ball.
Details of rice balls:
1) Rice variety: choosing the right variety is key. The longer grain varieties (Indica rice) or "Thai Fragrant Rice" are particularly tasty when freshly cooked, but don't taste as good when cooled. To make rice balls, use Japonica rice, pearl rice, or Northeastern rice with rounded grains. It is sticky and stays flexible after cooling, making it suitable for making rice balls.
2) Stuffing: The stuff inside the rice balls is called "gu" in Japanese. The most traditional "gu" has several kinds: dried plums, shibori + soy sauce, boiled seaweed, mentaiko, pickles and so on, and some people like to put only a little salt in the white rice. "Some people prefer just a little salt on their white rice.

There are many different types of onigiri, and they can be made with different ingredients, or different combinations of ingredients, to create a variety of different flavors. Using a combination of ingredients also provides a balanced intake of nutrients, and the different toppings can be colorful and beautiful.
