Green tea can not use 100 ℃ of boiling water, generally use 80 ℃ of water, the younger the tea the lower the temperature of the water, so that the soup is bright, green, fresh taste, vitamins are not easy to be destroyed; high temperature tea soup is easy to turn yellow, taste bitter, destruction of vitamins. Flower tea, black tea or low-grade green tea with 85 to 90 ℃ water brewing. Oolong tea with 95 ℃ or more boiling water brewing. Pu-erh tea, all kinds of tuo tea must be brewed with 100 ℃ of boiling water.

Generally, the water temperature is proportional to the solubility of the active ingredients in tea in water. The higher the water temperature, the greater the solubility, the thicker the tea; and vice versa, the lower the solubility, the smaller the tea, the lighter the tea.
