What is the best sterilization method for wine brewing?

Thermal sterilization and microwave sterilization were used to sterilize sweet wine, and the effects of the two methods on the sensory quality of the product under different sterilization intensities were studied. The results showed that microwave sterilization had less influence on the quality of sweet wine than thermal sterilization. Treating sweet wine for 50s with microwave sterilization equipment with rated input power ≤3kVA can achieve ideal sterilization effect, and has little effect on sensory quality indexes such as flavor and color of the product.
