The process of making handmade Longjing tea

1. Picking Tea Leaves: The time for handmade Longjing tea picking is usually around the time of Guyu or hibernation, selecting the young leaves with one heart and two leaves or one heart and three leaves, and holding the tea leaves gently when picking, not bringing the extra stems.

2. Drying: After picking, the tea leaves should be dried in a cool place to make them soft so that they can be dried and kneaded.

3. Drying: The drying process involves placing the dried leaves into a copper pot on fire and stirring the tea leaves with your hands continuously until they are dry.

4. Twisting: After drying, the tea leaves are put into the hands and gently twisted to keep a certain shape.

5. Killing: put the twisted tea leaves into the pot, pour 80-90 ℃ boiling water, the process of killing is the key, you need to keep turning the tea leaves to ensure that the leaves are heated evenly.

6. Baking: After killing the green tea leaves should be baked to ensure that its aroma and flavor is sublimated.

7. Screening: After roasting the tea leaves should be screened to remove impurities.

8. Packaging: the final step is to put the tea leaves into bags or put them into tea canisters for sealed storage to maintain freshness.
