Seeking authentic British fish and chips practice What kind of fish is fish, what are the dipping sauces, how do you make the pea sauce?

Fish and chips inside the fish used are white fish, the most is COD and Haddock (both are cod), and Plaice (butterfly fish is also called halibut left mouth fish).

The authentic way to eat it is to put salt and vinegar, I have not heard of dipping it in any sauce. This stuff is what used to be eaten by the working class and lower classes in England, and was popular mainly because of its calorie content, which was important in the era of the Industrial Revolution.

The recipe on the BBC's official website looks like this (it's basically pretty much the same thing):

1 shallot, finely chopped (shallot is a small, spindle-shaped onion)

25g/1oz butter

tsp sea salt

400g/14oz frozen peas (defrosted)

3 tsp sugar

100ml/3?fl oz chicken stock, boiling hot (chiken stock is the liquid version of chicken stock in the UK)

10 fresh mint leaves
