Lanzhou Lamian Noodles Dough Formula

The formula of Lanzhou Lamian Noodles is as follows:

Main ingredients:

Noodles, beef (breast)1500g, beef (ribs) 300g, beef bone1;

Accessories:

260g of ginger, 3 cloves of garlic, 300g of coriander, garlic and salt, 80g of Lanzhou beef noodle soup, 40g of Lanzhou beef noodle cook the meat, chicken essence and 1 radish.

Practice of Lanzhou beef noodles:

1. Wash beef and beef bones with clear water, then soak them in clear water for four hours, cut the beef, put it in a warm water pot, skim off the floating foam when it is about to open, put it in ginger slices and material bags, add salt one hour later, stew it with low fire for four hours, and then cut it into cubes.

2. Take a proper amount of Lanzhou beef noodle soup, put it in the pot, add water and simmer for about 30 minutes, and clarify it from the fire for later use;

4. Cut the radish into cubes, cook it in clear water until it is transparent, soak it in cold water, scrape the garlic seedlings, chop the parsley, and add water to ginger and garlic to make ginger and garlic juice;

5. Add broth to the pot, then add seasoning water (only pour the clarified part, don't use dregs) and water to boil and turn to low heat;
