Pig's head pu or fu

The correct one should be fǔ, pork head preserved is actually pork preserved.

Pork preserved meat is a kind of sliced meat product made of pork by marinating and baking, which is easy to consume, well-made, delicious, storage-resistant and easy to be transported with traditional Chinese flavor. Its color is bright brownish red. Fresh pork is used as the basic raw material, and the skin, fat and sinews are removed from the whole piece of lean pork.

Practice Characteristics:

The production process of pork preserved meat is complicated and strict, using fresh pork hind leg part, remove the skin, fat, sinews and bones, and take the whole piece of pure lean meat as the basic raw material, and cut it into thin slices. Then, dozens of condiments such as sugar, monosodium glutamate (MSG), special fish sauce, eggs, etc. are applied to the slices of meat, among which fish sauce is of vital importance. After that, the meat is spread flat and baked in a special sieve plaque.

The meat has to be sliced, mixed, sifted, dehydrated, baked, flattened, trimmed, boxed and so on more than a dozen processes, before becoming a piece of color, aroma, taste and shape of the dried meat, can be shipped to the market.
