How to make authentic red oil

1. Select dried red chili peppers with moisture content below 12%, requiring strong spicy flavor, no impurities, no mold;

2. Put fresh vegetable oil into a pot, boil the oil over high heat to evaporate its odor, and wait for the oil to naturally cool down to 40% to 50% of the oil temperature, and then cease fire.

3. Add the roasted pepper cubes to the cooled oil, stir, and soak for about 1 hour, heating over low heat until the peppers are light brown, and cease fire;

4. Remove the pepper cubes. Once the oil returns to room temperature, soak for 24 hours, remove and strain the red oil. Characteristics:The oil is bright red, clear and transparent, with a strong spicy flavor.

Tip:After the oil temperature returns to room temperature, the added peppers can be left to clarify for a while. Sesame oil is a prohibited vegetable oil.
