Lanzhou jujube meat
Rotten meat is a special traditional dish, fat but not greasy, brilliant red as fire, the more you chew, the more fragrant it becomes. Although there are rotten meat in many places, the rotten meat in Lanzhou has its own taste of the old Lanzhou people.
According to legend, Lanzhou people began to eat spoiled meat in the Ming Dynasty, and Wang came to Lanzhou with his family from Jiangsu. Jiangsu people like to eat steamed meat with wine during the Spring Festival, but there is no rice around Lanzhou, so there is no wine naturally. So in order to enjoy the taste of my hometown, and more importantly, to express my yearning for my hometown in the south during the Spring Festival, I made steamed meat with Lanzhou wine based on local materials. Over time, the rotten meat in Lanzhou has been shaped into a combination of pork belly and tofu milk, which has the same effect as wine making.
Steamed crisp meat
Steam in a steamer until the meat is soft and Huang Liang in color, salty and slightly spicy. Meat is fat but not greasy, tender but not greasy, which is one of the essential delicacies on the dinner table of Lanzhou people on holidays. Crispy meat is fried at high temperature first, and the crisp shell is wrapped with fresh and tender pork, which is attractive in color. After this process, it is steamed in a cage, and after retaining the attractive color, soft glutinous rice is added.
Sweet and sour sand
"Meat with sand" is made of pork or beef, red bean paste, sugar, egg white, rose sugar, starch and lard. After several processes, it tastes crisp outside and tender inside, and the meat is rotten and soft, sweet and delicious, which makes people drool. When cooking, heat the oil in the pan, put the cut meat strips in the oil pan with sand and fry them until golden brown. The taste is tender and crisp. Then pour in the prepared sweet and sour juice, and a delicious sweet and sour sand will be served.
Steamed meatballs
Generally, meatballs are wrapped with minced meat, coriander and other ingredients (fish, beef and mutton are also useful), then the oil is boiled, and the wrapped meatballs are fried in an oil pan for a period of time, fished out with a colander, placed in a dry place, and eaten after cooling. Steamed meatballs depend on the heat, which is not too bad, although it needs to be melted in the mouth and chewed carefully. Deep-fried meatballs retain the delicacy of meat, and then steamed, making them soft and waxy.
Braised pork joint
Pig elbow skin is thick and full of tendons, gum is heavy and meat is thin. Often boiled with skin, fat but not greasy. It is one of the delicious foods that people in old Lanzhou must eat on holidays. It is recorded in the Book of Songs that during the Lunar New Year, people drink "spring wine", eat "big meals", "bless" each other and make decorations to welcome the New Year. Eating elbows on New Year's Eve indicates that the fat pig will send blessings home in an arch.
Steamed pork belly with green vegetables
Braised pork with plum vegetables is generally fat but not greasy. It is characterized by bright red sauce color, delicious soup, smooth braised pork, soft and rotten food, crisp and rotten plum vegetables and attractive taste. Fresh plum vegetables are made by drying in the sun, selecting and pickling.
